Lemon Cupcake with Rainbow Fruit Salad Filling

Cupcake with Filling is one of the more interesting presentations of the cupcake in my opinion. Why? Because it is more fun in baking time and serving time in my opinion again.  The fun while baking is we can fill our cupcake with anything surprise filling for cupcakes we wish to put inside like marshmallow cream, fruity filling, your favorite candy bar, Oreo Biscuits and many others. You don’t have to be worried if the filling you choose cannot be baked or you are afraid that if your cupcake filling will be ruined if baking together with the cupcake. In this case you can take another option to fill your cupcake you can do it after baking by cut out the top of your cupcake. I’ll explain how this “cut out and fill” part later. In mean time let’s move to the fun while serving cupcake with filling. The fun we get while serving is when we serve this to our family or friends we will be able to give them “surprise” sensation when they give a big bite on the cupcake and let the filling inside the cupcake melt into their mouth.

The secret of baking success cupcake with filling is to make a great combination between the cupcake flavor and the filling of the cupcake itself. You don’t wish to make a wrong combination right and make your cupcake ended in disaster taste. Two examples of great combination are like strawberry cupcake with strawberry preserves filling/ strawberry fruit filling and chocolate cupcake with candy bar/Oreo biscuit filling.

Below I am going to take you step by step to find out another recipe that I think will make a great combination. First let me introduce you with lemon cupcake. I bet you all know the recipes of lemon cupcake maybe you even have your own lemon cupcake recipe. If not you can also find out a lot of lemon cupcake recipe on the internet by experts. Here I give you one of many other delicious lemon cupcake recipes that I found on the internet that I think it is lovely delicious if you know what I mean.

The adaption of lovely lemon cupcakes recipe:

Ingredients: (can make approx. 36 small-medium sized cupcakes)

180 g butter, softened

400 g caster sugar

2 large eggs

1 tsp pure vanilla extract

Zest of 1 lemon

Juice of ½ a lemon

½ tsp salt

2 ½ tsp baking powders

450 g all purpose flour

1 ¼ cups whole milk

Directions

Preheat your oven to 175 degrees C, and cream together your butter and sugar till creamy.

Beat in the eggs, vanilla, salt and baking powder and continue beating till the mixture is light and fluffy, then add your lemon zest and juice and beat in for another few minutes.

Add your milk and flour in 3 alternating batches, beating well after each addition. Once all the milk and flour has been added, beat at top speed for about 30 sec – 1 minute or till the mixture is smooth and shiny.

Line your cupcake baking tray with cupcake liners and fill each liner about ½ -2/3 full – It depends on whether you want the cake to peep over the top of the liner or not, or stay completely contained.

Place your lined and filled cupcake tray into the oven, and bake for 15-20 minutes or till a toothpick inserted into each cupcake comes out clean.

Remove them from the oven and place on a cooling rack till they have completely cooled. While they are cooling.

Now for the filling I decide to use fresh fruits. I found out that everybody loves fruit and enjoy the freshness of fruits. I think it will be an interesting idea to load various kinds of fruits inside lemon cupcake. To make it more lovable we can make use the different color of each fruit and make it into rainbow color and mix these rainbow color fruit with nice and yummy mayonnaise recipe.

Rainbow fruits + Yummy Mayonnaise = Rainbow fruits salad

Rainbow fruits: watermelon(red), oranges(orange),pineapple(yellow),kiwi(green),blueberries(blue) and purple grape(violet) – cut all these fruits into small nice pieces before you mix them with your yummy mayonnaise. (The selection of fruits is up to you as long as the color of the fruit is in the rainbow colors’ order.

Mix your rainbow fruits with your yummy mayonnaise. You can buy your favorite mayonnaise product or you can just your own homemade mayonnaise recipe.

To fill in your lemon cupcake with these lovely rainbow fruits salad

all you have to do first is to prepare “hole” to place the filling. How to make a hole in your cupcake? Here’s the way I have mentioned earlier before “the cut out and fill in” part. It’s very easy just follow these steps.

-          Insert sharp knife into a cooled cupcake at an angle halfway between the center and outside edge to cut out a circular cone of cake.

-          Once you have your cone of cake, remove it and slice off the pointing end of the cone, leave just the circular base.

-          The filling will then be put in the hole

-          The filling should be added using pastry bag if the filling is in form of creamy stuff like marshmallow cream but if the filling is like a whole stuff like rainbow fruits salad you just need a spoon to scoop enough rainbow fruits salad to be placed into the hole that you have prepared before for your filling.

Okay just consider you have finished all two main ingredients to make this lemon cupcake with rainbow fruits salad filling which are lemon cupcakes and rainbow fruits salad and you also have finished put filling in each of your lemon cupcakes with rainbow fruits salad. After that you just need to cover up the top of your cupcake with the circular base you cut out before. To make it more perfecto you add some frosting on top of it. Lemon cream will be just perfect especially you separate each cream and color them with different rainbow color and frost them line by line like rainbow colors’ order.
